NECI Small Plates Minisode #2 – Intro to Basic Pastries

Want to get a real feel of what it’s like to be enrolled at NECI? Our new ongoing video series, NECI Small Plates, can help you out. Get behind the scenes in our classroom kitchens, explore Vermont and beyond, and keep up with current events. Many of these minisodes will be posted here to the Futures in Food blog, but you may also want to “like” our Facebook page or subscribe to our Youtube channel for additional content. For instance, a recap of the recent Vermont Corporate Cup road race (including many NECI staff and the Governor) in Montpelier has been uploaded to our Youtube channel, but not posted to this blog or our Facebook yet. There’s only so many cool things we can show off at once!

In this minisode, we touch base with the Intro to Basic Pastries class. Students are preparing treats for sale at La Brioche, cookies for graduation and tour groups, as well as trying out different flavor combinations.

Bread Bakers Guild Team USA Wins At 2011 Sigep Bread Cup

Recently, Bread Bakers Guild Team USA won first place at the Sigep Bread Cup in Rimini, Italy. The four-member Team USA trained at La Brioche Bakery & Cafe of New England Culinary Institute prior to the competition.
