Remembering NECI: Attending NECI was a tremendously satisfying experience. It was a joy to be surrounded by people as obsessed with food as I was. The schedule was demanding but I never felt like I was wasting time. There was no busy work. Every chef and instructor knew who I was and pushed me to do my best.
I still use recipes from classes at NECI 13 years later. Vermont is a beautiful place to live and so strong in terms of commitment to local, sustainable and artisanal food. If I had to do it all over I would certainly choose NECI again.
