World Class Wine and Beverage Studies – Dellie Rex

This program is designed to involve participants in the education of wine and spirits from Europe and all over the world. The following topics will be discussed:

  • Four Maxims of Wine
  • Distilled Spirits
  • Cool Climate Regions of Europe
  • The Rest of Europe
  • Introduction to the New World
  • The Rest of the World
  • Tastings

Program Schedule:
The World Class Wine and Beverage Studies course is designed to be a series and participants should plan on attending all five of the sessions listed. Each session covers different information, but all sessions build upon one another.
When a participant completes the entire World Class Wine and Beverage Studies Series, they will receive a Certificate of Completion from the New England Culinary Institute Continuing Education Division.

  • Wed., October 29, 2008, 10:00 am – 2:00 pm
  • Thurs., October 30, 2008, 2:00 pm – 6:00 pm
  • Mon., November 3, 2008, 10:00 am – 2:00 pm
  • Tues., November 4, 2008, 10:00 am – 2:00 pm
  • Mon., November 10, 2008, 10:00 am – 2:00 pm

Participants will be tasting wine during each of the sessions so they will be provided bland crackers and/or bread. There will be no other food offered.

Cost:
While participants are not required to pay for attendance in the World Class Wine and Beverage Studies Series, a fee of $80 is required with the completed registration form. Since VHI’s WETF Grant from the State of Vermont prohibits the use of state funds for purchasing alcoholic beverages, this charge will cover the cost of wine and spirits needed for the tasting.
There will be a two participant per organization limit for this series.

Employer Obligation
As part of the grant requirements employers must agree to offer a promotion or provide a pay increase to employees who successfully complete this series of classes and receive a Certificate of Completion.
Once we receive the completed registration form we will contact employers to discuss these options and to complete an agreement.
Employers must also be willing to compensate their employees at their regular wage or minimum wage (whichever is greater) for hours spent at the World Class Wine and Beverage Studies Series.

Meet Your Instructor
Dellie Rex

New England Culinary Institute faculty member

Dellie Rex has been in the wine business for over 25 years. She holds a Master’s Degree in Business Administration and is a member of the Society of Wine Educators. She serves on the Board of the Elizabeth Bishop Wine Resource Center in Boston. In the summer of 2005, Ms. Rex came to the New England Culinary Institute as a wine instructor. She teaches in the Hotel & Restaurant Management BA Degree program; Culinary Arts Associates Degree Program and the Baking & Pastry Associates Degree Program. Dellie’s book, About Wine, is popular in many culinary schools.
Dellie has a Certificate in French Regional Wines from L’Academie du Vin in Paris. As a member of the Boston Chapter of La Commanderie de Bordeaux, an honorary society of connoisseurs of Bordeaux wines, she was the first woman to be inducted into that chapter.
